what we’re sipping

chai white russian

a classic white russian softened for early fall with strong chai. the coffee liqueur keeps it rich, while the tea brings warmth and spice without turning the drink overly sweet.

gather:

  • 1½ oz vodka

  • ¾ oz coffee liqueur

  • 1 oz strong brewed chai, cooled

  • 1 oz half-and-half or heavy cream

  • ice

  • cinnamon, optional

prepare:

  • brew the chai slightly stronger than usual and let it cool completely.

  • fill a rocks glass with ice.

  • add the vodka, coffee liqueur and chai and stir briefly.

  • slowly pour the cream over the top.

  • finish with a small pinch of cinnamon, if desired.

roasted delicata squash with parmesan + crispy sage

delicata squash is one of fall’s easiest vegetables to love: naturally sweet, quick to roast and, importantly, no peeling required. parmesan, sage and a little lemon are enough to make it feel finished without making it complicated.

gather:

  • 1 small delicata squash

  • 1 tbsp olive oil

  • kosher salt

  • freshly ground black pepper

  • ¼ cup finely grated parmesan

  • 5–6 fresh sage leaves

  • 1 lemon

prepare:

  • heat the oven to 425°F.

  • halve the squash lengthwise and scoop out the seeds, then slice into ½-inch half-moons.

  • toss with olive oil, salt and pepper and arrange in a single layer on a sheet pan.

  • roast for 20–25 minutes, flipping once, until tender and deeply golden.

  • add the sage leaves to the pan for the final 5 minutes, until crisp.

  • finish with parmesan and a squeeze of fresh lemon.
