gather:
1 oz gin
½ oz fresh lemon juice
½ oz simple syrup
3 oz chilled champagne
lemon twist, for garnish
create:
combine gin, lemon, and simple syrup in a shaker with ice.
shake until very cold.
strain into a chilled flute or coupe.
top with champagne.
finish with a lemon twist.

pasta al limone
ingredients:
8–10 oz fresh pasta (tagliatelle, fettuccine, or fresh spaghetti)
4 tbsp unsalted butter
¾ cup finely grated parmigiano-reggiano, plus more for serving
½–1 lemon (zest + juice, to taste)
¼ tsp freshly cracked black pepper
flaky salt
1 tbsp pasta water, reserved (more as needed)
how to make:
bring a pot of salted water to a boil. cook fresh pasta until just tender (usually 2–3 minutes). reserve ½ cup pasta water, then drain.
add butter to a warm pan over low heat until just melted (no browning).
add pasta and toss. add parm in small handfuls, tossing continuously to emulsify.
add lemon zest, then a small squeeze of lemon juice (start with 1–2 tsp, build from there). loosen with a splash of pasta water until glossy.
finish with black pepper and flaky salt. serve immediately with more parm.
