ingredients:
1.5 oz fig preserves (or fig syrup)
1 oz fresh lemon juice
1.5 oz gin (or vodka, if you prefer)
2 oz sparkling wine or prosecco
1–2 sprigs fresh thyme
optional: a splash of club soda for a lighter version
directions:
in a shaker, combine fig preserves, lemon juice, and gin with ice.
shake gently, then strain into a glass filled with ice.
top with prosecco and a splash of club soda.
garnish with a sprig of thyme (pro tip – torch it lightly if you want the aroma to bloom)

What We’re Cooking: carmalized onion + gruyere tart (recipe by DelishVibe)
ingredients (6–8 servings):
olive oil
butter
yellow onions, thinly sliced
garlic
puff pastry sheet
gruyere cheese, shredded
fresh thyme
salt & pepper
white wine
directions:
melt butter + olive oil in a skillet; add onions and cook on low heat ~45 min until deep golden and caramelized.
stir in garlic, thyme, salt & pepper (and wine, if using); let cool.
preheat oven to 400 °F. roll puff pastry to fit a sheet, score a 1-inch border, prick the center with a fork.
spread the onion mixture over the center. top with shredded gruyère.
brush pastry edges with egg wash or milk. bake 20 min, then increase to 400 °F and bake an additional 6–8 min until golden and crisp.
let cool slightly, slice, and serve warm.
