what we’re sipping

raicilla la 75

gather:

  • 1 ¾ oz raicilla

  • 1 oz fresh lime juice

  • ¾ oz pineapple syrup (store-bought, or fresh pineapple juice sweetened to taste)

  • a few drops chili oil, for garnish

  • salt, for the rim

create:

  • Salt the rim of a chilled coupe glass.

  • Fill a shaker with ice and add the raicilla, lime juice, and pineapple syrup.

  • Shake until well chilled.

  • Strain into the coupe and finish with a few drops of chili oil on top.

what we’re making

grilled shishito peppers with lime crema

gather:

  • 1 lb shishito peppers

  • 1 tbsp olive oil

  • flaky sea salt, to taste

  • ¼ cup mexican crema (or sour cream)

  • 1 tsp fresh lime juice

  • pinch of sea salt, for the crema

prepare:

  1. Toss the shishito peppers with olive oil.

  2. Heat a grill or cast-iron skillet to medium-high and cook the peppers in a single layer, turning occasionally, until charred and blistered, 6 to 8 minutes total.

  3. Remove from heat and sprinkle with flaky salt.

  4. Whisk together the crema, lime juice, and a pinch of salt.

  5. Serve the peppers warm alongside the crema for dipping.

Trust is about a fortune and the four different people who each insist they're the one who can explain how it was made. Andrew Bevel, the financier at the center of it, buys up a novel that tells his story unflatteringly and hires a ghostwriter to replace it with his own version. Neither account turns out to be the last word.

Díaz structures the whole book around a simple, uncomfortable question: when someone stands in front of a fortune and says "this is what I built," how much of that story is actually true, and who decides?
